The timbre will be similar but one will sound slightly flat and the other will sound slightly sharp. It's a bit like playing a fiddle that's a fraction above concert pitch and then detuning it to slightly below concert pitch.
As long as you are playing solo you will not hear much difference (if any). But as almost all accordions with MM with tremolo have one M at 0 and the other at +something putting an accordion with MM- in the mix with all the others MM+ will not sound good together. Not a big problem if they are all just 6 cents plus or minus, but many accordions have more tremolo and then it will sound really bad together unless you like what a friend of mine names the "beer register".
When two instruments have slightly different intonation, the higher one tends to sound more correct (thus the tendency to have solo instruments stand out by making them slightly higher in pitch). So 0/-6 is not attractive, really, because it stands out in an unfavorable manner.
