It looks like a valve with an adjustable orifice to control the amount of air that "leaks" out of the bellows.

One comment was the bellows pressure valve for midi accordion. Bellows doesnt have a use anyway but an adjustment is good for player.
Looks like a kitchen plumbing part (I have one of those in my fridge, it controls the inlet of water in to my water/ice dispenser). I guess someone thought that by introducing a bigger "leak" in the bellows it would be easier to play or at least close the accordion when the button was hit?
I don't see any MIDI activators, wiring or contacts within that picture... I am almost willing to bet that there is no MIDI in that accordion.
