Could anyone recommend what thickness bellows gasket to use for replacing the rope seals? I'm kind of worried about going too thick and causing the bellow frames to crack.

A gasket tape depth of !/16" should fit your situation.
In the case of warped bellows frames the tape can be doubled in areas needed as it compresses easily.

By far the most common gasket tape is 2mm. It seems to fit in almost every accordion (certainly every Hohner I have worked on). Besides the thickness there is also variation in width. Most accordions can take tape that is 5mm wide, but some are better served with 4mm.
